Mangalica fat is obtained from the fat of the Hungarian Mangalica pig, an old pig breed with a very woolly coat.
Characteristics:
- High proportion of unsaturated fatty acids (especially oleic acid, similar to olive oil).
- Soft consistency, therefore more spreadable than conventional pork lard.
- Pleasantly nutty-mild flavor, less 'heavy' than normal pork fat.
- Higher melting point, making it suitable for frying.
- Traditionally appreciated in Hungarian and Austrian cuisine.
From a health perspective it is often described as more digestible than industrial lard or hydrogenated fats, but of course it remains an animal fat with a high energy content.
